Mochi is an essential delicacy, it is the name given to a family of traditional Japanese pastries . Mochis exist in various forms, such as iced mochis, on skewers (dango), soft mochis (gyuhi). The best known is mochi daifuku which consists of a ball made from sticky rice filled with red bean paste . It is enjoyed during the tea ceremony. The aim is to reduce the bitterness of the tea.
